Brussel Sprout Quesadillas
Brussel sprouts are easily one of my favorite vegetables. I've got countless of ways I eat them, but the best way is in a delicious quesadilla. Caramelized with onions, sandwiched between two layers of melty cheesy, and topped with your choice of either salsa, guac or hot sauce. IMO, you literally cannot go wrong.

Instructions

Warm a large skillet over medium heat. Once warm, add in the brussel sprouts, onions and 1 tbs of oil. Stir in the cumin, chili powder and salt and toss to coat.

Sauté the veggies for 4 minutes or until caramelized, stirring occasionally. Once done, do a quick taste to make sure it's seasoned to your liking! It should have a slight flavor, but not over power the brussel sprout mixture. Remove from the pan and place in a bowl with a spoon.

One at a time, get the tortillas ready. Lightly brush the bottom tortilla with oil and add some of the tajin on top. Place the tajin side face down in the skillet.

Cook until the bottom is crispy and golden, then gently flip and cook for another 2-3 minutes until golden.

Once done, remove from from the skillet and place on a cutting board. Let stand for 1-2 minutes. Take a pizza cutter, and cut into four equal triangles.

Serve with salsa or guacamole and enjoy!
Notes
•My favorite salsa to eat these with is the Salsa Fresca from El Burrito Mercado in West Saint Paul, MN. It's a classic salsa that lets the veggies in this dish really sing.
